  • 1 can (14 ounces) diced tomatoes (fire-roasted for extra flavour, if available)

  • 1 cup fresh baby spinach leaves

  • 1/2 cup crumbled feta cheese

  • 1 cup heavy cream (or half-and-half for a lighter version)

  • 1/4 cup grated Parmesan cheese

  • Salt and freshly ground black pepper to taste

  • Fresh basil leaves, chopped, for garnish

Instructions:

  1. Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to the package instructions until al dente. Drain the pasta, reserving about 1/2 cup of the pasta water, and set aside.
